Wines worthy of Grand Crus

The vineyard of Château Greysac extends over the Hameau de By, a situation which makes it one of the most northerly Médocs of this wine peninsula, since it is situated at the confluence of the estuary and the Atlantic Ocean. The vineyard is managed with the greatest care and is of impeccable standard. As soon as he acquired Château Greysac in 2012, Jean Guyon instituted a sustainable farming.

Composed of rolled pebbles from the quaternary period on a limestone and clay subsoil, the vines are about 40 years old.

The Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot grape varieties produce a great wine, elegant and remarkably well structured, with fruity, ample and voluptuous aromas.

In the cellar, it is with the aim of revealing the fruit in its most beautiful expression that the vinification is carried out, from its arrival in the fermentation vats to its passage in the ageing barrels for 12 months.

To delight your taste buds even more, we also offer you Le Blanc de Greysac, a cuvée for which we carefully select a blend of local high-quality plots.

2011

2011 – The vintage of delicacies

This wine displays a beautiful aromatic palette of blackcurrant, blackberry, bitter almond and vanilla which form the most delectable bouquet. The ample and generous palate supports a nice fruitiness. A subtle oaked grain conditions the soft and pleasant tannins.

For lovers of old wine, enjoy with pan-fried duck aiguillettes, cured meats or soft cheeses.

2016

2016 – A successful vintage

Elegant, fruity, spicy and subtle bouquet. Refreshing fruity attack. Well-balanced body, with perfectly integrated tannins and a pleasant aromatic intensity. Freshness on the finish.

Ideal served between 16 and 18C with roast chicken, grilled prime rib, pasta with tomato and black olive sauce, cheeses or with chocolate/caramel mousse.

2017

2017 – A surprising vintage

This vintage presents a beautiful fruity expression accompanied by a lot of freshness. The tannins are supple and elegant, round and balanced. The oak flavors are delicious. A fine vintage of pleasure, built on suppleness.

Enjoy with friends over a barbecue, grilled tuna steak, morel risotto, curry or Thai beef.

2018

2018 – A vintage of great quality

The year 2018 did not give our teams much respite due to exceptional weather conditions. Our Merlots show the characteristics of a great vintage with a brilliant color, notes of ripe fruit and good concentration. The Cabernet wines are also sublime with a beautiful structure and our Petit Verdot is simply ripe and full of color!

Classic with entrecote with chips, grilled sardines, a vegetarian curry with butternut and spinach, an eggplant and goat cheese tart, a dark chocolate cake.

2019

2019 – The vintage of balance

What a great vintage for the estate.

The nose is aromatic, elegant and displays finess, fine depth and harmony. We find notes of bourbon vanilla, blackberry and more slightly raspberry associated with hints of blueberry, liquorice, a fine touch of blueberry as well as points of racy minerality, nutmeg and sweet spices.
The palate is fruity, mineral, balanced and offers freshness, an acidic frame, a nice fineness of grain as well as harmony, a little tension and greediness.

Ideal served at 18C with grilled red meats, lamb chop with rosemary, white truffle pizza, roasted cauliflower with curry, grilled chicken and even tuna sushi.

2019

2019 – The vintage of balance

Once again this year we had to be extra vigilant in selecting the best possible grapes.
Our Greysac white is a perfectly balanced 100% sauvignon blanc, revealing a vibrant, aromatic style with limestone, citrus, green apple aromas and a lively freshness.

Enjoy chilled with crayfish salad, lobster rolls, fresh grilled fish or seafood.

2020

2020 – A vintage out of the box

The 2020 vintage is now of very high quality with a beautiful balance of fruit and freshness.

To be enjoyed chilled as an aperitif, with sushi, an ocean salad, grilled fish or with salmon pasta.

2021

2021 – The vintage of balance

We have, without difficulty, selected grapes of unprecedented quality to bring you a balanced, tasty and fruity Sauvignon.

To be shared with friends as an aperitif, with oysters, a salad of marinated octopus, sea bass or a sole marinière.
